Matches made in heaven
To boot, let’s go over the unlikely marriage of sweet and savory flavors. Much like other common pairings, including sweet and sour or sweet and salty, the reason a sweet/savory combination is such a delight to our taste buds is because of palate balance. Sweet flavors are especially powerful on the tongue, as noted by MyRecipes, and quickly leads to what’s called “palate fatigue”. A common example is how the first bite of cake always tastes much sweeter than the twentieth.
Savory flavors are more difficult to exhaust, and in combination with sweetness, creates a blend of flavors on the tongue that complements and give new life to each other. Done properly, pairings of sweet and savory flavors highlight every ingredient in the dish instead of burying one in the flavors of another. This is particularly important in this dish, because…
The power is in the pesto
Our apricot pizza uses the classical Italian spread pesto, a dish with characteristic distinction among all of its flavors. The ingredients of pesto (basil, pine nuts, olive oil, and garlic) are all contributors to an overall flavor but are distinct by themselves. Every area of taste is covered in pesto but sweetness, which is the perfect opening for fruit like apricot to make its introductions.
Combining all of these distinct flavors means the creation of a dish that stimulates every part of the tongue, but doesn’t overwhelm it; the end result is a pizza so delicious you’ll be less worried about culinary science and more worried about eating another slice!
