Cooking apricot pizza in your oven

Ingredients

  • 1 12” pizza shell (see our recipe here)
  • 3 Tbsp basil pesto
  • 2 apricots, thinly sliced
  • 4 oz goat cheese, crumbled
  • ½ cup chicken breasts, cooked and cubed
  • salt and pepper

Directions

  1. Preheat your pizza oven to 750 degrees.
  2. Coat dough base with basil pesto. Scatter sliced apricots on top, then cover with chicken and goat cheese. Season with salt and pepper.
  3. Place into wood fired oven and cook until crust is golden brown and goat cheese is properly melted – about 1-2 minutes. Enjoy!
