There are many gas-fired pizza ovens on the market. Gas is a worthy fuel choice because a gas-fired pizza oven is convenient to use. It fires up fast, burns hot, provides consistent temps over time and the fuel is widely available.

That said, many prefer wood because of the mystique of cooking with wood fire plus the flavor imparted by a wood-fired oven cannot be matched. So, how does one choose?

Easy-To-Clean "Slide-In/Slide-Out" Cordierite Pizza Stone

The pizza stone on a Bertello Pizza Oven is perfectly sized to easily slide in before use and easily slide out after cool-down for simple cleaning. The 0.6" thick Cordierite stone sets on four posts built into the floor of the oven which suspends the stone to allow for necessary heat circulation within the oven.

You can use a wooden table, glass table, metal grated table, or plastic folding table. A solid sheet metal table will get hot due to being so heat-conductive. We've also used plastic folding tables many times.

Any table that has the same dimensions as the oven model you choose with allowance will work!the answer to the question here.

You can also put a heating pad down below the back of the oven to further protect the surface.

You can remove the wood-burning tray and dump the ashes. Do this at least one day after cooking, so you know the ashes have completely cooled down and will not start a fire.

You can clean the interior surface of the oven by using a damp rag. 

Do you have the gas burner? If so, turn the burner on high and let it run for at least 30 minutes or so with the stone in the oven. This will burn everything off of the stone. After it cools down, you can rotate the stone 180 degrees, then repeat. 

If you don't use the gas burner method, you can use water and damp rag. You can also use a wire brush and a scraper. Do not use any soap or chemicals on the stone. It is very porous and will absorb this.

Generally, we do not recommend pellets, because they tend to cause a sooty black smoke. If only using wood to cook, we recommend using charcoal as a base layer to keep the wood burning, then add 100% Natural Oak Wood Kindling. 

If using wood chips with the gas burner, we recommend preheating the oven with the gas burner on high for about 30 minutes, then turn to low and add 2 to 3 wood chunks for several minutes before cooking.

The legs fold up underneath the oven. Please look underneath the oven if you do not see the legs, then simply unfold them.

Yes, the oven works well year round, and can be used in sub-zero temps without any issues!

Do an initial burn-off before cooking, for around 30 minutes.

The Bertello Propane Burner uses 16,000 BTUs. You can also purchase a NG Burner if you have a home natural gas sytstem. A 20 lb propane tank typically holds 430,000 BTUs when full. If you use the oven on the highest setting with gas only, using 16,000 BTU’s per hour (430,000 divided by 16,000 = 26.875), the tank should last over 26 hours of cooking.
